Today in the Hasty Tasty Meals Kitchen we’re experimenting with creamy textures. Real cream sauces with butter, cheeses, and/or heavy cream contain too much saturated fat. How can the health-conscious cook satisfy the “cream” tooth?

Products on the market available in any supermarket can help you make fake-out creamy sauces or soups. Fat free evaporated milk, fat free half & half (I prefer Land o’ Lakes brand), lowfat sour cream, Neufchatel cheese, and plain ol’ cornstarch work in recipes traditionally laden with butter and heavy cream and/or cheese.

Consider this crustless cherry cheesecake.

RECIPE

Cherry Cheese Dessert

Ingredients:

  • 12 ounces softened Neufchatel cheese (or lowfat cream cheese)
  • 1 large package sugar-free, fat-free instant vanilla pudding mix
  • 1 can no-sugar-added pie filling (I like cherry, but any will work)
  • 3 cups cold skim milk
  • 12 squares graham crackers, crushed

Directions:

  • In a blender, combine pudding mix and milk and mix just until blended. Add Neufchatel cheese. Mix until smooth and thick.
  • Pour mixture into a pie plate (or 8 individual parfait dishes).
  • Top with the pie filling. Refrigerate.
  • Before serving, sprinkle the crushed graham crackers evenly over the top. Scoop into individual dessert bowls.

Makes 8 lowfat servings of a delicious dessert. You won’t miss the fat or the sugar!

You can make your own cream soups, too. Here is a recipe for fish chowder, but you can vary it by substituting clams, shrimp, additional potatoes, corn, mushrooms, chicken, or whatever kind of creamy soup you want to make.

RECIPE

Fish Chowder

Ingredients:

  • 1 cup diced potato
  • 1 small onion, diced
  • 1 cup celery, thinly sliced
  • ½ cup bell pepper, diced
  • 1 cup fish, any kind, coarsely chopped
  • 1 10 oz can chicken broth or stock (or bouillon dissolved in 10 oz. water)
  • 2 cups fat free half-and-half (or 2 small cans evaporated skim milk)
  • 2 Tablespoons cornstarch
  • 1 Tablespoon fresh thyme or 1 tsp. dried thyme
  • 1 handful fresh parsley, chopped

Directions:

  • Using a 3-quart pan over medium heat, dry-sauté onion, celery, and bell pepper (or you may spray bottom of pan with nonstick spray)
  • After about 3 minutes, add broth and potatoes
  • Dissolve the cornstarch in the half-and-half, then add the mixture to the pan
  • Add fish. Cover pan, reduce heat to a low simmer, and cook for about 15 minutes or until fish and potatoes are tender.
  • Remove from heat. Add herbs. Stir and serve.

Makes about two bowls or 4 cups. 

Make mock sour cream by blending lowfat cottage cheese with lemon juice, or adding artificial sweetener to plain nonfat yogurt. Cottage cheese blended with skim milk and seasonings makes a light cream sauce for pasta dishes. Here’s a recipe for easy cheese sauce. I use a Vita-mix but you can also make it in a skillet.

Cheese Sauce in the Vita-mix®

Ingredients:

  • 2 Tablespoons cornstarch
  • 2 cups skim milk
  • ½ tsp. sea salt
  • 12 oz reduced-fat cheddar cheese, cubed or shredded*

Directions:

  • Add milk and salt to Vita-mix container. Cover but leave plug in middle of cap open.
  • On the lowest setting, run the Vita-mix while adding cornstarch through opening in cover.
  • Replace cover plug. Gradually increase the speed to High. Run 3-4 minutes or until steaming
  • Stop Vita-mix. Remove cover plug. Add the cheese through opening in cover.
  • Run Vita-mix (start low, stepping up to High) for one minute or until cheese is completely blended.
  • Turn off Vita-mix and immediately pour cheese sauce over its intended dish (macaroni, taco salad, etc.)

*Any lowfat cheese works with this recipe

To adapt this recipe to the skillet, just remember to dissolve the cornstarch in cold milk then heat to boiling to thicken. Cornstarch doesn’t dissolve easily in warm liquid. Use a whisk to thicken the milk then a wooden spoon to blend in the cheese.

One last word on creamstyle cooking: Cream based soups or cream sauced foods don’t keep well in the freezer. It’s better to freeze what you want to save for later and then add the creamy textures to the dish right before serving. As you experiment in your kitchen, you’ll find more ways to fake the fatty creams, butter, and cheeses in your own dishes.

Easy Vegetable Soup

The slow cooker cooks all day while you're away

Soup is a great meal for adding fiber to your diet, especially vegetables.  Soup helps you feel full more quickly, which aids weight control.  Soup is simple to make, nearly foolproof, and inexpensive. It’s good for you!

There is no single, correct recipe for making soup.  Almost any recipe turns out tasty.  Today while shopping at my favorite supermarket, I found boxes of low-fat, reduced-sodium broths on a Buy-one-get-one-free table.  I bought a couple and took the sale as a sign that I needed to make a pot of soup.  Soups made with broths don’t require meat or long cooking times to develop taste.

I also bought a 28 ounce can of crushed tomatoes, and picked up a nice zucchini and a head of cabbage.  Back home, I poured the broth and the crushed tomatoes into my slow cooker, added diced onion, carrot, celery, chopped zucchini, ¼ head shredded cabbage, and a cup of frozen corn (but really whatever is in the produce drawer of your fridge is a potential soup ingredient).  I seasoned with three minced cloves of garlic, 1 Tablespoon herbes de Provence, and a generous dash of Redneck Pepper® Italian Redneck seasoning.  My vegetable soup is simmering now and will be ready for dinner whenever we are.  I let the soup cook at 2 (or Low)  for at least three hours. 

How does slow cooking qualify as a “hasty tasty meal” ?  It requires minimal time to prepare and minimal supervision.  Then when the hungry family members show up to eat, you have little left to do.  Don’t be afraid to try other combinations of soups in the slow cooker.  Homemade soup is so much lower in sodium and other additives than canned, and more economical, too.  I estimate my pot of soup is costing me $3.50, and will yield eight bowls of soup.  That’s a lot of soup for the money. 

One last money-saving tip:  If you have leftover soup that isn’t quite enough for another meal, stretch it by adding a ½ cup of cooked rice or pasta.

Minorcan Clam Chowder

Hey, it’s getting to be soup weather again. Here in the Hasty Tasty Meals kitchen I’m making a pot of Minorcan Clam Chowder. If you’re unfamiliar with Minorcan style cuisine, come to St. Augustine, Florida, where many restaurants offer dishes featuring recipes from the 18th century settlers who originated from the Spanish island of Minorca.

I’ve adapted this recipe for the more modern, Hasty Tasty Meals kitchen. I use canned clams, but if you have fresh clams, all the better!

RECIPE

Minorcan Clam chowder
Ingredients:
1 pint canned clams (do not drain)
1 Tbsp. oil
2 lbs. onions, diced
1 green bell pepper, diced
2 28-oz cans crushed tomatoes
2 cloves garlic, minced
¼ tsp. thyme
¼ tsp. allspice
¼ tsp. pepper (I use Redneck Pepper® original)
¼ tsp. salt (optional–I omit because there is salt in the canned clams and juice)
2 lbs. potatoes, peeled and minced

Directions:
In the pot of a 6-quart pressure cooker, add oil and sauté onions until soft. Add all other ingredients. Cover and secure lid, bring to pressure, and cook for four minutes. Remove cooker from the burner and allow it to sit 5 minutes. Release pressure according to the manufacturer’s instructions. Cool chowder, and store in the refrigerator. Making the chowder ahead of time allows the flavors to season. Warm over medium heat and serve.

Note: Also good with fish instead of clams. For richer chowder, double the amount of clams.

Note that this is lower in saturated fat than New England clam chowder, and spicier than Manhattan clam chowder. Also, if you scrub the potatoes and leave on the peels, you’ll add potassium and fiber. It’s about as figure-friendly a clam chowder as you can get. Enjoy!

Turkey leftovers? Here are some ideas!

For the holidays, I’m recapping some of our favorite turkey leftover recipes. Merry Christmas!

RECIPE

Turkey Tetrazzini
Serves 4-5

(I use a Kitchen Craft liquid core electric skillet, but this recipe can be baked in a conventional oven. I prefer the electric skillet because the entire dish is prepared in one pot, reducing clean-up time in the kitchen. Also, a quality liquid core electric skillet uses less energy than an oven):

Dry sauté in a non-stick skillet:

1 cup sliced, fresh mushrooms
1 small yellow onion, chopped
3 cloves garlic, minced

After the mushrooms have browned, add:

1½ cups cooked turkey, cubed
4 oz. uncooked angel hair pasta, spread evenly across vegetables and chicken in skillet (or 1½ quart baking dish)

In a 1 pint measuring pitcher, blend:

1 10 ¾ oz. can Campbell’s® 98% Fat Free Cream of Mushroom Soup
½ cup milk
¼ cup water
¼ cup sour cream
¼ cup grated Parmesan cheese

Pour soup mixture over turkey and pasta. Be sure all pasta is covered.

If using a liquid core electric skillet, cover and close vent. Set temperature to 200°F and simmer for 30 minutes. Do NOT remove lid to peek. If baking, cover casserole with foil and cook in a pre-heated 375°F oven for 30 minutes.

Garnish with finely chopped fresh parsley and additional parmesan cheese if desired. Serve with a garden salad and whole grain bread. Serves 4.

With the rising cost of canned goods, I’ve started canning my own turkey stock, which is easy using the pressure cooker and pint canning jars.  But whether you make your own stock or buy it, you’ll enjoy making soup from leftover turkey.  Here’s one suggestion, Turkey Noodle Soup:

RECIPE

Turkey Noodle Soup

Makes 4 servings

In a 3 quart pot over medium heat, add

2 teaspoons olive oil

brown for 5 minutes:

1 clove garlic, minced
1 onion, diced
4 stalks celery (including the leaves), sliced
1 bell pepper (any color, but I use red), seeded and chopped

Add:

1 quart turkey stock or chicken broth
1 cup water
Seasonings – your choice
1 ½ cups cooked turkey, cubed

Bring to a boil, then reduce to a low simmer and cover. Don’t remove the lid and you’ll be able to cook on the lowest setting.

About 10 minutes before serving, add:<!–[if !supportLineBreakNewLine]–>

1 cup dry whole wheat noodles, or any whole wheat pasta

Taste test for seasonings. You may want to add salt or pepper. When the noodles are al dente, serve the soup.

The beauty of this recipe is the cooking time is flexible. The soup can simmer for 20 minutes or a couple of hours because the starchy pasta isn’t added until the last 10 minutes. It’s a light, healthy meal for those days following the overindulgence of a holiday meal. Double or triple the recipe and feed a crowd on a cold night.

One more tip: You can adapt this for the slow cooker. Add the pasta in during the last hour and turn to Low.

Here’s a new one (for me) that I modified from a GE recipe.  Theirs is baked in a casserole dish, but I use the electric skillet.

RECIPE

Turkey Cashew Casserole
Serves 6

In a pre-heated electric skillet, melt:

1 Tablespoon butter

Sauté for five minutes:

2 cups chopped celery
1 large onion, chopped

Add:

5 cups cubed cooked turkey

Mix together in a large mixing pitcher or bowl:

1 cup turkey or chicken broth
2 cans reduced-sodium condensed cream of mushroom soup
dash of hot sauce

Pour over chicken and cover.  Simmer (220°) for 20-25 minutes (or bake in a casserole dish at 350° for 30 minutes in a traditional oven).

Sprinkle cooked casserole with:

1 cup cashews
10 oz. chow-mein noodles

Serve and enjoy!

I saved my favorite for last, turkey burritos!  This recipe can be adjusted according to how much leftover turkey you have.

RECIPE

Turkey Burritos
Makes 6

Preheat oven to 375°.  In a medium bowl combine:

1 cup shredded cooked turkey
1 can Rotel® tomatoes and green chiles
1 cup reduced-fat shredded Mexican blend cheese
1 small onion, diced
1 Tbsp. Mrs. Dash Southwest Chipotle seasoning (or your choice)

Mix together and divide into six equal portions.  Fill each of the:

6 whole wheat tortillas

with a portion of the mixture.  Wrap tortilla around mixture into a roll.  Place burritos in a 9×13 casserole dish.  Cover with aluminum foil and bake for 30 minutes.  Remove from oven and uncover.  After 5 minutes, remove each burrito from the casserole dish and serve.
